SUPER Protein Pancakes

Can you believe there's a pancake out there that doesn't need any syrup?!?!?! I know, how can that be, isn't that illegal?? It's possible and it's right here. The sweetness from the bananas and the protein will fill you up. The perfect recipe


Super Protein Pancakes


Ingredients


  • 1 large banana, ripe

  • 1 cup oat flour, (store bought or homemade)

  • ¾ cup unsweetened soy milk (you can use your choice of any plant-based milk)

  • 1 teaspoon pure vanilla extract

  • 1 teaspoon baking powder

  • ¼ cup plant-based protein powder (vanilla or unflavored)


Directions


  1. In a mixing bowl, mash the banana until smooth. Don't worry if there are a few small chunks. However, if you don't like the small chucks, blend the banana until smooth.

  2. Add all the remaining ingredients into the bowl and combine. The batter may be on the thick side. If you want to thin it out, add 1 tablespoon of milk at a time until desired consistency. The thick batter will still be "pourable" and delicious.

  3. Over medium heat, spread a thin layer of vegan/plant-based butter or your choice of oil on the pan. Pour 1/4 cup of the batter onto the hot pan, spread out the batter.

  4. Cook until the edges are dry and crispy, approximately 2- 4 minutes. Turn pancakes over and repeat on the other side, approximately 2 - 4 minutes.

  5. Do the same with the remaining batter. Serve with fresh fruit or if you have to have it your favorite syrup. ENJOY!!
